Winter Warmers – tips and tricks to keep us full on a budget this winter.

As the temperature suddenly drops and we start the battle with ourselves on how long we can last before we put the heating on (you know you’re doing that too!) my mind always moves to food. Winter comfort food primarily! This blog will focus on feeding ourselves on a tight budget, trying to make something tasty and filling and making best use of our leftovers.

Top money-saving swaps: If you cook with chicken breasts, a cheap switch is to use chicken thighs instead. More flavoursome and better value for money. Cooking a whole chicken and challenging yourself to use it for multiple meals (follow the link for recipes eg risotto, stir-fry, curry, stock and soup) is also a great budget-buster.

If you, like me enjoy a Sunday roast when your family are around, but have started to feel the squeeze and find yourself horrified at the prices for your Sunday roast, give pork shoulder a try. For around £5 you can feed a family of 5. Or why not bulk cook and have a load of pulled-pork you can turn into a variety of meals. Freeze into portions if you have oodles of leftovers! Turn leftover veg into bubble and squeak, leftover roast potatoes into Bombay potatoes. The possibilities are endless!

Wean yourself off packet spice mixes and store-bought sauces – instead search up their ingredients and make up your own. Kinder on your body and budget. My personal favourite is to create Mexican and Indian spice mixes, and experiment with my leftovers. My kids’ favourite is when I bulk cook bolognaise, if the leftovers don’t get used for lasagne, I turn it into a chile-con-carne (follow link for the full recipe) by using a pantry spice mix and padding out with extra veg. Simple, yet satisfying!
